Preparing Turkish Poğaça

In this tutorial, we’ll make something cool without the computer: Poğaça.

Poğaça (pronounce: “Poacha”) is a tasty turkish scone, easy to prepare, and goes well as a little snack, side dish, appetizer or as supplies for a trip. You may also bring a basket full of them to a barbecue at your friends’ house, they will love it.

A remark: This recipe is slightly modified from the original. Normally one would use less oil, and some buttermilk instead; as well as baking soda instead of yeast. The recipe as shown here comes from the grandmother of a good friend of mine, so we could call it Poğaça Özbakay.

This tutorial shows how to prepare the yeast dough and the filling, as well as the production of the actual Poğaça.

Preparation

1. Ingredients

The following ingredients are required:

  • 500 g wheat flour
  • 125 ml olive oil
  • 250 ml warm milk
  • 1 pack of white cheese (preferably from sheep’s milk)
  • 1 tea spoon of sugar
  • 2 tea spoons of salt
  • 2 eggs
  • 1 cube of fresh yeast
  • 1 bundle of parsley
  • 1 soup spoon of sesame seeds

If you like it spicy, you can also add a hot hot chili.

2. What’s also required

Also we need a large bowl for the dough, another bowl for the filling, a pot for heating the milk, two cups for egg white and yolk, one or two forks and a knife.
